Chicken Fried Chicken

Description
Place crackers in a large resealable plastic bag; seal the bag and crush the crackers until they turn into coarse crumbs. Add flour, potato flakes, season with salt and pepper, and mix well. Beat the egg in a shallow plate or bowl; heat oil in a large skillet over high heat. One at a time, dip chicken pieces into the beaten egg, then place them into the bag with the crumb mixture, seal the bag, and shake to coat evenly. Reduce heat to medium and cook the coated chicken in the skillet for 15–20 minutes, turning frequently, until golden brown.
