
Chicken Fricassee
Description
1. Peel and chop the vegetables. Sauté onions and carrots in oil for 5 minutes over medium heat. Cut chicken meat into 10 pieces. Sear the chicken for 4 minutes until golden brown. 2. Reduce the heat, cover with a lid, and continue cooking over low heat. 3. Add salt, ground pepper, and flour. Stir, cover with a lid, and simmer for 4–5 minutes. 4. Remove from heat. Heat chicken broth and place the chicken pieces into it. Add a little wine and herbs. The chicken should be completely covered with liquid. Bring the broth to a boil, cover with a lid, and let stand for 30 minutes. 5. Sauté mushrooms in oil, adding a little lemon juice. Combine mushrooms with the chicken. Cook for 3 minutes. 6. Whisk egg yolks with cream. Slowly pour the sauce into the pot, stirring constantly. Continue cooking for another minute. Season with salt, ground pepper, and a drop of lemon juice. 7. Before serving, add a piece of butter to the fricassee.
