
Quick Chicken Piccata
Description
The recipe won't take much time. Piccata is a popular Italian dish, usually made with veal. Outside its homeland, chicken piccata is more popular—easier and faster to prepare. The Italian term "piccata" refers to a cooking method in which meat is first fried in breadcrumbs, then finished in a flavorful sauce with butter. The perfect side dish for chicken piccata is spaghetti or any pasta. So, read on my recipe. Serve hot.

Prepare all the necessary ingredients. I recommend using fresh, not frozen, chicken breasts, as they are tastier.

Cut each chicken breast in half lengthwise. Place the pieces on a work surface, cover with plastic wrap, and gently pound with a meat mallet.

Season chicken breast cutlets with salt and pepper to taste; I recommend using paprika, cayenne pepper, etc., instead of classic black pepper.

Dip the chicken breasts on both sides in flour and fry in olive oil until lightly browned.

Prepare the sauce. Melt butter in a skillet, add capers previously dried with paper towels, and cook for a few minutes. Then pour in the wine, add lemon juice and finely chopped parsley. When the sauce comes to a boil, add water.

Bring the sauce to a boil again and add the previously seared chicken breasts. Cover and simmer over low heat for 5 minutes. During this time, the sauce will penetrate the chicken, making it incredibly tender, while the sauce itself will thicken slightly.
