
Chicken liver stewed with onions and carrots
Description
The dish is prepared without unnecessary complications. Until recently, I preferred chicken liver either fried or as a pâté, but never stewed. Perhaps past unsuccessful attempts put me off, or maybe I was just too lazy to look for new, reliable recipes. But fried chicken liver had become a bit boring, and I wanted something different, yet delicious. That's when this recipe came to the rescue. The finished dish can be served at the table.

Finely chop the onion and place it in a hot pan with vegetable oil. Fry until golden brown.

Rinse the chicken liver thoroughly under water, remove the veins and any unwanted parts, and cut into small pieces. Add the liver to the pan with the onion. Add a little salt, gently mix, and cover with a lid. The liver will release its juice and simmer, so to speak, in its own juice.

While the liver is simmering, grate the carrot on a coarse grater and add it to the frying pan.

Don't forget to stir. You can add a little water and cover with a lid again. Simmer until the liver is cooked through.
