
Chicken breast in egg

Rinse the chicken breast and pat it dry. Carefully remove all the bones and trim off any membranes and tendons. Then cut the breast into small portion-sized pieces, about one centimeter thick.

Carefully pound each piece with a mallet. To prevent the tender meat from tearing, it's best to do this using plastic wrap. If you don't have any on hand, use a regular polyethylene bag instead.

Season the chicken fillet with black pepper and salt. You can also marinate the pieces beforehand in your favorite spices or herbs to give the dish a more flavorful taste.

In a deep bowl, beat the eggs with a pinch of salt. It's most convenient to do this using a mixer, but you can also use a regular whisk. When foam appears, mix in a little flour into the eggs so that the batter doesn't spread out on the pan.

Dip each chicken fillet piece into the eggs and fry on a hot skillet with vegetable oil. Cook for five minutes on each side. Serve the dish with herbs or porridge.
