
Chicken breast in cranberry sauce
Description
This simple dish is perfect for a festive table or as a hot meal when fried chicken breast is served with spicy cranberry sauce. It also works well as a cold appetizer when the same chicken breast is served chilled, sliced! Simply finger-licking good.

Mix the jam, chopped shallot, wine, and olive oil.

Marinate the chicken breast in the prepared marinade and let it sit for at least 30 minutes.

Shake the marinade off the chicken breast, reserve it, and fry the chicken with added butter until golden brown.

Pour the fat out of the skillet, then add 1/4 cup of wine. Reduce by half. Add the marinade and water. Simmer over medium heat for about 5 minutes. Strain the sauce, then mix in the butter and honey. Season with salt and pepper to taste.

Cut the chicken breast thickly on the diagonal and pour the sauce over it.
