
Chicken breast stewed with vegetables
Description
The recipe won't take much time. You can use any vegetables you like for this dish: potatoes, tomatoes, bell peppers, beans, celery stalks, etc. The main thing is that the cooking time of the vegetables roughly matches that of the chicken breast. Serve hot.

Prepare the listed ingredients. Thoroughly rinse the chicken breast in water, removing any bones if present. Peel the carrots and onions, and rinse them together with the tomatoes under water. Remove the seeds from the bell pepper by cutting off the tops, then rinse it.

Cut the chicken breast into portion pieces. Heat vegetable oil in a cauldron or a high-sided skillet, or a sauté pan, and place the chicken in it. Sear each side for 3-5 minutes over medium heat.

Slice the carrots into rounds, the onion into half-rings, the pepper into cubes or strips, and cut the tomatoes in half.

Rinse the broccoli florets in water and cut them into pieces. You can use frozen cabbage, but then it needs to be thawed beforehand.

Meanwhile, add onion and carrot to the chicken. The chicken breast will release its juices, and the vegetables will simmer in them until the liquid evaporates. Only after that will they begin to brown.

Stir them occasionally and brown for 5-8 minutes. It is very important that the onion is fried until soft and juicy.

Next, place the sliced bell pepper and broccoli florets.

Add cherry tomatoes to the container, filling it to the top. Optionally, you can use regular tomatoes, sliced or diced, or tomato pulp.

Pour in the tomato sauce, add salt and ground black pepper, and simmer everything under a lid over medium heat for 10–12 minutes. Add your favorite herbs and spices—basil, oregano, thyme, etc.—if they suit the taste well.
