
Chicken in Wine Sauce (Coq Au Vin)

The chicken is marinated in wine for almost a day according to this recipe, then slowly simmered in it for several more hours with the addition of various spices. The day before cooking, gut the chicken and cut it into 8 or more pieces. Cover the meat with wine (½ bottle of Burgundy red). Add small onions, peeled and coarsely chopped carrots, and herbs (tied together with a string). Cover the container with the chicken and refrigerate overnight.

The next day, remove the chicken and vegetables from the marinade. Set the wine aside for later use.

Sauté the chicken pieces in a pan with oil. Then transfer the chicken to a plate. Add garlic and vegetables to the same pan and sauté for a few minutes.

Transfer the chicken and vegetables to a large pot, pour in the reserved wine, and season with salt and pepper.

Bring the chicken to a boil over medium heat.
