1. Preheat the oven to 200 degrees. Prepare the waffle batter by mixing all the ingredients in a bowl until a smooth consistency is achieved. Heat the waffle iron and lightly spray its surface with oil from a spray bottle. Using a ladle, pour the waffle batter into the hot waffle iron and cook until golden brown and crispy. You will get four waffles.

2. Set the prepared waffles aside and let them cool completely. Once cooled, pulse them in a food processor until they turn into fine crumbs.

3. Spread the wafer crumbs on a large baking sheet. Place in a hot oven and bake for about 5-8 minutes. Reduce the oven temperature to 175 degrees.

4. Heat a skillet over medium heat and add vegetable oil. Season chicken legs with salt, pepper, and Chinese spices. Coat the chicken legs in panko breadcrumbs, then place them in the hot oil in the skillet and fry for 10–15 minutes until browned and crispy.

5. Use a thermometer to check the chicken's internal temperature—if it hasn't reached 74°C, place the chicken on a baking sheet and bake in the oven for another 10 minutes, until the internal temperature reaches 74°C. Optionally, drizzle the chicken legs with maple syrup and serve immediately.
