
Chicken in yogurt sauce
Description
The dish is prepared without unnecessary complications. The ingredients are very simple—just chicken, cheese, lemon, garlic, spices, and so on. The biggest challenge might be finding natural yogurt—unfortunately, even in large stores it's extremely rare. And what is available is usually so full of preservatives that calling it natural is downright sacrilegious! That's why I've been making my own yogurt for a long time—I buy a starter culture from the pharmacy (it's also available in health food stores and sections), mix it into warm milk in the evening, stir, wrap the pot in a towel, and by morning I have a generous amount of fresh, thick, and dense yogurt. If you can't do the same, substitute the yogurt with a mixture of 20% sour cream and kefir (1:3). Otherwise, preparing chicken in yogurt sauce shouldn't cause you any trouble. It turns out delicious—no doubt about it. The ready dish can be served.

Lightly pound the chicken fillet, season with salt and pepper, add other spices, mix and let marinate at room temperature for about half an hour.

Meanwhile, prepare the sauce. To do this, peel and finely chop the garlic.

Grate the zest on a fine grater.

Mix garlic and zest with yogurt. Add salt.

Place the chicken in a baking dish and pour the sauce over it. Cover with a lid or foil and bake in a preheated oven at 180°C for about half an hour.

Meanwhile, grate the cheese on a coarse grater.

Sprinkle the chicken with cheese, increase the temperature to 200°C, and cook until a golden cheese crust forms. Serve the dish hot with any side dish.
