Description

To prepare this dish, place the bird on a special roasting rack or use an ordinary glass jar or bottle. As it cooks, the excess fat renders out and drips evenly into the pan, thoroughly basting the meat from both inside and outside, preserving its juiciness and forming a thin, crispy crust. Calculate the cooking time as 20 minutes per 500 grams of weight.

    Prepare the necessary ingredients for baking the chicken. For the marinade, you can use a mix of spices and herbs to your taste. Optionally, you can add soy sauce, mustard, or honey to the marinade. Use a bird weighing no more than 1-1.2 kg.

    First of all, prepare the chicken. Remove excess fat and any remaining feathers. Rinse and dry the bird with paper towels to remove excess moisture.

    Place the spice and herb blend in a mortar with salt and grind with a pestle.

For added flavor, you can add bay leaf, thyme, or rosemary to the water. Alternatively, you can use an aluminum beer can, leaving a little of the beverage in the can. The beer will give the chicken meat a distinctive flavor with notes of caramel and hops. If you're concerned about the printed label on the aluminum can, wrap it in foil.

    Place the chicken on the can. The bird should fit snugly and stand steadily. Transfer the setup to a baking sheet, roasting pan, or skillet to allow fat to drain. Make sure it fits in your oven.
