
Teriyaki Chicken with Rice

1. The main thing is to prepare the right sauce. Pour mirin into a small saucepan, bring to a boil and simmer for about 5 minutes over low heat.

2. Then add the sugar, mix well until it dissolves completely. Pour in the sesame oil, soy sauce, and rice vinegar.

3. Peel and mince the garlic with ginger. Add them to the sauce.

4. Add a pinch of pepper. Simmer over the lowest heat for another 3–4 minutes. If the sauce seems too thin, dissolve some cornstarch in a small amount of water and stir it into the saucepan. Remove from heat and let cool.

5. Wash the chicken (legs, fillet, wings), dry it, and place it in a bag or a deep bowl. Pour the cooled sauce over it.
