I never used to try making egg-based sauces because I was always afraid the egg whites would curdle and ruin the whole dish. But actually, if you pour the egg mixture over the chicken, bring it to a boil, and immediately turn off the heat, the whites won't even curdle upon reheating! Give it a try—it's delicious and easy.

1. Rub chicken legs with salt and spices to taste on all sides. Sear until golden brown, then add chopped herbs, boiling water, and simmer over medium heat for 20 minutes.

2. Let's make the sauce. Beat the egg white with lemon juice until light foam forms, and beat the yolk with a pinch of salt until smooth. Then combine these ingredients, add oil, and pour the mixture over the cooked chicken.
