
Chicken with Whiskey and Peach Sauce
Description
The dish is prepared without unnecessary complications. The exquisite aroma of whiskey and smoky barbecue sauce give these chicken thighs a tangy flavor. The finished dish can be served at the table.

1. Preheat the oven to 150 degrees. Dice the yellow onion. Peel the garlic cloves. Thinly slice the green onion. Heat olive oil and butter in a large pot over high heat. Place chicken thighs in the pot, skin side down, 4 at a time.

2. Sear on both sides until browned, then transfer the chicken to a plate and repeat with the remaining thighs.

3. Pour off half of the fat and return the pot to the heat. Add the chopped yellow onion and stir, cook for 2 minutes.

4. Pour the whiskey into a saucepan. Be very careful if using an open flame. Stir in the onion and chicken fat, and cook for 1–2 minutes, until the whiskey reduces in volume.

5. Pour in the barbecue sauce, add the canned peaches, water, and Worcestershire sauce. Add the garlic cloves. Stir until well combined.

6. Then add the chicken thighs, skin side up. Cover with a lid and place the pot in the oven. Braise for 1 1/2 hours, then remove from the oven.

7. Place the pieces of chicken on a large mound of mashed potatoes. Sprinkle with chopped green onions on top and serve immediately.
