
Chicken with rosemary, garlic, and oranges
Description
For a side dish, it's good to bake slices of potatoes and oranges. You can serve the chicken with any sauce you prefer.

1. Wash the chicken, make a small incision in the skin, take garlic cloves, slice them into rounds, and carefully tuck them under the chicken skin, distributing evenly across the whole chicken.

2. Finely chop fresh rosemary, mix with olive oil. Add a pinch of black pepper and salt, then mix well.

3. Cut the chicken along the spine and flatten it on a cutting board (almost like chicken tapaka). Generously rub with half of the rosemary mixture and place on an oiled baking sheet. You can also put it in a roasting bag. Bake in the oven for about 50 minutes at 250 degrees Celsius.

4. Slice the orange into half-circles, remove the chicken, cover it with the orange slices, and bake for another 30 minutes.

5. Prepare the side dish. Peel the potatoes, cut each potato into 6-8 pieces, mix with the remaining rosemary mixture, and place on an oiled baking sheet. Put the potato pan in the oven under the chicken (at the same time when you placed the oranges). When the chicken is done, remove it, increase the oven temperature to 250 degrees, and move the potato pan to a higher rack.

6. Place the cooked potatoes on a serving dish and put the chicken on top. Serve with fresh vegetables.
