
Chicken with rice and beans
Description
The recipe won't take much time. Don't be intimidated by the combination of rice and beans together—everything turns out very harmonious and delicious! Simple and accessible ingredients will help you prepare a wonderfully tasty dish that your loved ones will truly appreciate. I'll be cooking it in a multicooker, but you can just as successfully prepare it on the stove in any thick-bottomed cookware, such as a cauldron. Serve hot.

Prepare all the necessary ingredients. Any part of the chicken is suitable for this recipe; I'm using a thigh.

Remove the skin from the thighs and cut each one into two pieces. Place the chicken in the multicooker and add the oil.

Sear the meat with salt and spices until a light golden crust forms, then add the grated carrots and diced onion, and sauté everything together for about 10 minutes longer.

Add the shredded cabbage and cook until it wilts.

Then add the minced garlic and diced tomato, previously peeled.

Rinsed rice and beans. If you are using dried beans instead of canned, you can pre-cook them until half-done.

Pour in the tomato juice, add water if necessary—the rice should be completely covered with liquid. Add salt to taste and simmer everything together for about 30 minutes.

At the very end, mix everything and cook for another 10 minutes. Chicken with rice and beans is ready.
