
Chicken with carrots in a pan

Mix all the ingredients for the flavored oil. Sauté over medium heat until the garlic and shallot turn golden brown.

Strain the resulting oil and wipe the pan with a paper towel.

Prepare the chicken thighs. I removed all the fat from the thighs. Cover with plastic wrap and pound with a meat mallet to achieve even thickness. Then season both sides with salt and pepper.

Heat 2 tablespoons of flavored oil, add red wine vinegar and lemon juice, and simmer over medium heat. Dredge the chicken in flour and place it in the pan. Sear until golden brown on both sides.

Then place the carrots on top of the onion, season with salt and pepper. Pour in the chicken broth. Cover with a lid and continue simmering for about 30 minutes, until the carrots are tender.

Place the cooked carrots and chicken on a separate plate. Strain the remaining juice and pour it into a separate cup. Now melt the cream cheese in a skillet and pour the strained chicken broth into it. Whisk thoroughly until a sauce-like mixture forms.
