
Chicken with lemon, arugula, and orzo
Description
If you buy packaged arugula, check the labels—often it's already pre-washed and ready to eat, so no need to wash it. Instead of chicken fillet, you can use red meat, such as skinless and boneless thighs; the dish will turn out even more delicious.

Prepare the ingredients. Wash the chicken fillet and arugula, then dry thoroughly.

Cut the chicken fillet lengthwise into two pieces, lightly pound through plastic wrap, season with salt and pepper, and lightly spray with lemon juice.

Lightly dust the fillet with flour, then dip it into the beaten egg.

Coat in breadcrumbs and fry over medium heat until cooked through. About 3 minutes on each side will be sufficient.

Cook orzo pasta according to instructions in slightly salted water, usually 4 to 6 minutes. Drain the orzo in a colander, then return it back to the pan, drizzle with olive oil and mix.

Toss the arugula with the remaining olive oil, drizzle with lemon juice, and gently mix.
