1. Wash the chicken, dry it, and if desired, tie the legs with baker's twine. I rarely do this, and it's not necessary.

2. Place the chicken in a baking dish. Brush the chicken with lemon juice, squeeze the juice from the lemon over the chicken and into the baking dish. You can place the lemon halves inside the chicken cavity. Season the chicken with salt, pepper, and spices. You can tuck pieces of bacon under the skin on the breast.

3. Let the chicken marinate for now, while we take care of the potatoes. Peel the potatoes, cut them in half or into quarters (if the potatoes are large), place them in a pot, cover with water, and add salt. Bring to a boil, then immediately drain the water. Transfer the potatoes to the chicken.

4. Spray the chicken and potatoes in the baking dish with oil, add broth, water, or wine, and place the herbs on top. Put the chicken in a preheated oven at 200°C (392°F) for 40 minutes. If the top becomes too brown, cover it with foil during baking. If it gets too dry, add more broth or wine. The chicken and potatoes are done when the meat falls off the bone and the potatoes are tender.
