
Chicken with potatoes and pumpkin baked in the oven

I suggest using traditional everyday vegetables and adding a vibrant, healthy autumn ingredient—pumpkin. Prepare the ingredients for cooking chicken with potatoes and pumpkin.

Wash and peel the pumpkin and potatoes. Cut into cubes, but not too small.

Peel the carrots and onion, rinse them, and chop. Cut the carrots into quarters and the onion into half-rings or also into quarters.

Wash the chicken pieces and dry them with a paper towel. Transfer to a deep dish. Season with salt, pepper, and add dried basil or any other spices you prefer.

Pour in the soy sauce, add the sour cream and tomato paste. Mix well and let marinate for about 30-40 minutes.

In a deep dish, combine the chopped potatoes, pumpkin, onion, and carrots with the chicken. Mix well and transfer everything into a roasting bag. Alternatively, you can transfer all ingredients into the roasting bag and mix them there.

Secure the roasting bag with a clip and place it on a baking sheet or in a baking dish. Bake in a preheated oven at 185–190°C for 45–50 minutes. A few minutes before the end of cooking, you can cut off the top of the roasting bag to brown the chicken and vegetables.
