
Chicken with mushrooms in soy sauce
Description
The dish is prepared without unnecessary complications. It can be served with a side of rice (the most popular Asian side dish) or as a standalone dish. Use any chicken parts: thighs or drumsticks are best, as they are not as dry as fillet. Before serving, garnish with green onions. The dish is now ready to be served.

1. Cut boneless, skinless chicken thighs into small pieces. Place the meat in a bowl and add rice wine, 1 teaspoon of salt, roughly chopped green onion, and peeled ginger cut into half-moons. Mix well, then let marinate at room temperature for 30 minutes, stirring occasionally.

2. Peel the garlic, halve the chili and remove the seeds. Heat the wok with vegetable oil, add the garlic, star anise, chili, cinnamon sticks, green onion from the chicken, mandarin zest, and sauté for 1 minute.

3. Remove the chicken from the marinade, place it in a wok, add ginger, and cook for 10 minutes.

4. Pour in two types of soy sauce and 1.5 cups of water. After boiling, simmer everything for half an hour.

5. Slice the mushrooms into pieces and add them to the wok after 30 minutes, then add sugar. Cook for another 15 minutes. Mix the flour with a tablespoon of water and pour it into the chicken and mushrooms.

6. Add salt to taste if needed, turn off the heat, let it steep for 15 minutes, then serve garnished with chopped green onions.
