Step 1

1. Chop the green onions and chili. Peel and mince the garlic. Mix dark rum and 2 tablespoons of water in a small saucepan, simmer for 3 minutes. Pour the rum mixture into a blender, add malt vinegar, green onions, garlic, dried thyme, chili, vegetable oil, allspice, ginger, cinnamon, nutmeg, salt, black pepper, and brown sugar. Blend until smooth. Transfer 2 tablespoons of the rum mixture to a small bowl, add ketchup and soy sauce, and mix well. The chicken marinade is ready. Both marinade and sauce can be prepared one day ahead, covered, and stored in the refrigerator.

2. Place the chicken in a baking dish. Pour lime juice over it. Coat the chicken with the prepared sauce, rubbing it into the skin. Cover the dish and refrigerate for at least 4 hours, turning the chicken occasionally. The marinated chicken can be prepared one day ahead and stored in the refrigerator.

3. Preheat the grill, remove the chicken from the marinade, and season with salt and pepper. Place the chicken on the hot side of the grill grate and sear for about 2 minutes. Then move the chicken to the cooler side of the grill and continue cooking for approximately 15 minutes, turning occasionally. Serve the chicken with rum sauce.
