Description

This recipe won't take much time. I never even realized that this classic Wiener chicken dish, a traditional Austrian meal, would resemble our modern chicken recipes so much. In fact, this chicken, breaded and then fried in a large amount of butter by Austrian cooks, was truly a dish for the wealthy. Back then, the dish also included offal, while wings were never used. But today we won't delve too deeply into Austrian traditions and will prepare just the chicken. It will take very little time, as this Wiener chicken recipe is extremely simple, and the result will be an amazing chicken with a crispy crust, which, by the way, children love—this has been tested!)) 1) Thoroughly rinse the chicken and pat it dry. Generously season it on all sides with salt and ground black pepper, sprinkle with lemon juice, and let it marinate for a few minutes. 2) Cut the chicken into pieces. The ingredient list is given for 4 servings, but if you're preparing more servings, simply increase the ingredients accordingly. 3) Place flour and breadcrumbs into separate plates. In a third plate, beat the eggs. 4) Now coat each chicken piece first in flour, then dip in the beaten eggs, and finally roll in breadcrumbs. Fry in plenty of butter, either deep-frying or in a skillet. Cook for approximately 15–20 minutes until the chicken is fully cooked through. 5) Transfer the cooked chicken onto paper towels to absorb excess fat. Serve the Wiener chicken garnished with fresh parsley, lettuce leaves, and lemon wedges. This interesting dish is actually called "backhendl." I hope you'll enjoy it as much as I do. Serve it hot.
