Instructions

Step 1

We thoroughly wash the chicken carcass and place it whole into a pot, covering it with water. After it comes to a boil, we cook the chicken in salted water for 45 minutes until fully done. Once the chicken has cooled, we separate it into portion-sized pieces. Do not discard the broth; we will need it later.

Step 2

The potatoes should also be peeled and boiled in salted water until fully cooked (30 minutes). This can be done simultaneously with cooking the chicken.

Step 3

Slice the onion into rings and the carrot into rounds.

Step 4

Place the chopped vegetables into a saucepan and pour in half a cup of chicken broth.

Step 5

When the liquid comes to a boil, season with salt and pepper. Simmer over low heat for 10-15 minutes, and add the clarified butter 5 minutes before it's done.

Step 6

Place the boiled potatoes in a casserole dish, add pieces of chicken on top, and finish with a layer of vegetables together with their juice. Add salt and pepper if needed. Put the casserole into a preheated oven at 180 degrees and bake for half an hour. Then serve, garnished with fresh herbs.
