
Thai-style chicken with peanut butter
Description
The recipe won't take much time. The Thai marinade described in this recipe also works perfectly for marinating tofu or vegetables, so you can replace the chicken with tofu, and the peanut butter with sesame oil or any other nut oil. Serve hot.

1. Cut the chicken into medium-sized cubes. Mince the garlic. In a large bowl, mix soy sauce, honey, lime juice, minced garlic, peanut butter, and curry powder.

2. Place the chicken pieces in a bowl with the marinade, cover with a lid, and marinate for 2-3 hours.

3. Heat a skillet over medium heat. Remove the chicken from the marinade and place the pieces onto the skillet. Sear the chicken in sauce over high heat for 7-8 minutes, until fully cooked. Reduce the heat to medium and add pre-cooked vegetables, if desired. Sprinkle with sesame seeds and serve immediately. If you'd like a thicker sauce, mix 1 teaspoon of cornstarch with 1 tablespoon of water. When the chicken is nearly done, reduce the heat to medium and add the cornstarch mixture.
