
Hunter-style chicken
Description
The recipe won't take much time. Hunter's chicken or chicken cacciatora—a dish from Central Italy. Serve hot.

1. Preheat the oven to 175 degrees. Peel and chop the onion, bell pepper, and mushrooms. Mince the garlic. Cook the pasta according to the package instructions. Drain the water and set aside. Season the chicken on both sides with salt and pepper. Dredge in flour. Heat olive oil and butter in a skillet over low heat. Brown the chicken on both sides, cooking 4 pieces at a time. Transfer to a clean plate. Repeat with the remaining chicken. Drain half of the fat from the skillet.

2. Add the chopped onion, bell pepper, and garlic. Sauté for 1 minute. Add the mushrooms and sauté for another minute. Add thyme, turmeric, and salt. Add red pepper flakes, if using.

3. Add additional black pepper to taste. Mix, then pour in the wine. Add tomatoes and mix until smooth.

4. Add the chicken, without fully submerging it in the sauce. Cover with a lid and place in the oven for 45 minutes. Remove the lid and increase the temperature to 190 degrees. Cook for another 15 minutes.

5. Remove the skillet from the oven. Place the chicken and vegetables onto a plate. Return the skillet to the oven and cook the sauce for a few minutes. Place the cooked pasta onto a large serving dish. Add the vegetables, then place the chicken pieces on top of the vegetables. Pour the sauce over. Sprinkle with chopped fresh parsley and grated Parmesan cheese.
