Rinse the chicken under cold water, then cut it into small pieces, season with salt and pepper. Place the pieces into a heatproof dish. Peel the onion and slice it into half-rings, then arrange it over the chicken.

Now peel the potatoes and cut them into small pieces, place them on top of the onion layer, and season with salt and pepper. Then repeat each layer until all the ingredients are used up (don't forget to season with salt), with the last layer being potatoes.

Place the dish in the oven and set the temperature to 200 degrees. Cook for 2.5 hours, uncovered. Garnish the finished dish with fresh herbs and serve.
