Piri-piri chicken

Description

Piri-piri chicken is an authentic Portuguese dish, very spicy, which came to Europe from Portugal's African colonies. High in protein and excellent for stimulating blood circulation, piri-piri chicken makes a perfect winter dinner. Especially with a bottle of Portuguese wine.

    Wash the pepper and remove the seeds. Be careful when handling chili peppers—preferably wear gloves while cleaning them, otherwise your palms may burn afterward.

    Cut the peppers into random pieces of various sizes, place them in a saucepan, drizzle with olive oil and juice of half a lemon. Sauté over low heat for 8-10 minutes.

    Remove the peppers from the heat, add a teaspoon of dry paprika, a garlic clove, and salt. Blend with a blender until smooth purée forms.

    Take a piece of chicken fillet and make three fairly deep cuts in it.

    Place the fillet pieces into a baking dish and generously pour spicy pepper sauce over them. Make sure the sauce thoroughly gets into the cuts made in the meat. Lightly spray the top with olive oil to help form a crust.

    Place the baking dish in the oven and bake for 30 minutes at 200 degrees.
