
Grilled chicken
Description
I'd like to share a helpful tip: the prepared sauce can be stored in the refrigerator for 3 days. So you can enjoy grilled chicken for several more days, that is, if anything is left of this deliciousness :)

Step 1
Mix water and tomato paste in a saucepan until smooth. Then add the remaining marinade ingredients: soy sauce, vinegar, sugar, minced onion and garlic, and finely chopped jalapeño. Bring the mixture to a boil, stirring constantly, then reduce the heat and simmer, stirring occasionally, until the sauce reduces in volume (50–60 minutes). Stir frequently toward the end of cooking to prevent sticking. Set aside a quarter of the sauce for serving.

Prepare the grill. It's best to use a covered grill with indirect heat. Place the chicken on the grill without adding salt or pepper, and grill, turning occasionally. Monitor the internal temperature of the meat using a special thermometer. It should reach 75 degrees (20–25 minutes).

Then move the chicken to the direct heat area and grill it, generously brushing with sauce using a brush and turning occasionally.

A beautiful brownish-golden crust should form on the chicken pieces. If necessary, add more charcoal to the grill during cooking.

Serve the chicken with the sauce set aside in the first step and any side dish or fresh vegetables.
