Chicken stuffed with rice, baked in the oven

Description

I learned the recipe for baked rice-stuffed chicken from my friend; she prepares this dish for all family celebrations. I decided to make it for my husband's birthday. I have to say, it's a great recipe—although I omitted a few ingredients, such as dried shrimp, which didn't significantly affect the taste. My husband and all the guests were delighted with the dish. It looked absolutely stunning on the table, and the tender meat simply melted in your mouth. For the next celebration, I will definitely prepare rice-stuffed chicken baked in the oven at home—it makes the table truly royal.

    So, wash and thoroughly dry the chicken. Then chop a piece of fresh ginger and 5-6 garlic cloves, place them in a bowl, add 4.5 tablespoons of oyster sauce, 3 tablespoons of soy sauce, white ground pepper and salt to taste. Mix the ingredients—sauce is ready. Rub the sauce all over the chicken (inside, outside, and under the skin), then leave it to marinate overnight in the refrigerator. Rice should also be soaked overnight in warm water, which should be 2-2.5 cm above the rice level.

    The next day, about 4 hours before the planned celebration, we soak dried mushrooms and separately shrimp (if using) in warm water for an hour. After that, we pour vegetable oil into a frying pan and place it over heat. While the oil is heating, we drain the water from the mushrooms and shrimp, chop them into pieces, mince the garlic, and cut the sausages into small cubes. First, fry the sausages with garlic in the oil, then add the mushrooms (and shrimp) and cook for a few more minutes. After that, add the rice (without water) to the pan. Fry all the ingredients until golden, then pour a spoonful of water into the pan and simmer the filling until the rice softens. At the end, add chopped green onions, fry briefly, then remove from heat. Season with white pepper, oyster sauce, soy sauce, and salt.

    Now we place the prepared stuffing inside the chicken and secure the opening with toothpicks. Put the bird into a baking dish or on a baking tray and place it in a preheated oven at 190 degrees. Depending on the size of the chicken, bake for 1.5 to 2 hours. During cooking, baste the chicken with the juice that collects at the bottom of the dish.

    If the chicken starts to burn on top, cover it with foil, but personally I like the brown, flavorful crust on the meat. Enjoy your meal!
