Chicken chkmeruli

Description

Georgian cuisine has always been famous for its spices. In this recipe, I also used some of them. Perhaps the main spice in preparing chicken chkmuruli is adjika, which Georgians often sell at markets. No other spice can replace the unique aroma and taste that adjika gives to this dish. If you can't find adjika, don't be upset—use spices you're familiar with; I'm sure the chicken will still turn out just as delicious! One more important point: don't keep the chicken in the oven longer than indicated, otherwise it will become dry and lose all its juice.

    Wash the eviscerated chicken and dry it.

    Lay the chicken flat along the backbone and carefully, using a kitchen mallet, pound it until the chicken takes on a flat shape.

    Rub the chicken all over with spices and salt. I recommend letting the chicken marinate for a while, so it absorbs the spice flavors better. But if you're short on time, proceed directly to roasting.

    Heat a skillet, add vegetable oil, and place the chicken in it. Cover the skillet with a heavy lid to press down on the chicken.

    Fry the chicken for 15 minutes on each side, until a golden crust forms.

    While the chicken is frying, let's start preparing the sauce.

    In a separate skillet, melt the butter.

    Add all the garlic, previously pressed through a garlic press or simply finely chopped.

    Over low heat, sauté the garlic until golden, stirring constantly. Season with salt, add the milk, and bring the sauce to a boil. As soon as the sauce boils, reduce the heat and continue simmering until thickened.

    Transfer the cooked chicken from the pan to a cutting board. Cut the chicken into portion pieces, then place them into a special Georgian pan (kechhi). If you don't have one, use a regular deep frying pan or any deep baking dish.

    Preheat the oven to 200 degrees.

    Pour the prepared sauce over the chicken and place in the preheated oven for 15 minutes.

    After 15 minutes, remove the chicken chkmeruli from the oven and serve it hot.
