
Turkish kurabiye with pear filling
Description
Delicious baked goods for the whole family. The filling for these ultra‑tender, extraordinarily fragrant and tasty pastries can be made from any fruit or a mixture of fruits. For filling such pastries you can also use ready‑made thick jam or preserves. Try it and come up with new variations. Serve warm or chilled. Perfect with tea.

When preparing the necessary ingredients, keep in mind that the butter for the dough should be cold (but not frozen), and the amount of pears for the filling should be about 800 grams by weight.

Start by preparing the dry mixture. For this, combine flour, salt, 50 grams of sugar, vanilla sugar, and baking powder in a deep bowl.

Dissolve the dry yeast in warm water and set it aside for a while.

Cut the cold butter into cubes or grate it, and add it to the dry mixture prepared earlier.

Rub the butter and dry ingredients by hand into crumbs, add the egg and yeast solution, and knead a soft dough.

Place the resulting sand‑yeast dough in a warm place for 40–60 minutes.

While the dough is warming, attend to preparing the filling. Cut the prepared pears into small pieces and place them in a saucepan, add 100 grams of sugar.

Boil the pears for a few minutes until they become slightly translucent and soft.

Remove the pear pieces from the resulting syrup (it can be used for preparing other dishes) and let them cool.

After the specified amount of time, the dough will slightly increase in volume and become even softer.

Knead the dough with your hands and roll it out on the work surface into a round sheet about 4–5 mm thick. Using a glass or a cookie cutter, cut out round discs.

Place a portion of pear filling on half of each circle, cover with the other half, and seal the edges, gently pressing them in several places.

Place the formed items on a baking sheet and put them into the preheated oven. Bake the Turkish kurabye with a pear filling for 20–25 minutes at a temperature of 180–190 °C.

Remove the baked pastries from the oven and let them cool. Serve with tea, optionally dusting the Turkish kurabye with powdered sugar.
