
Sesame paste
Description
Minimal ingredients — excellent result. Tahini is often used as a dressing for hummus, salads, various sauces, etc. You can easily make it at home if you have a blender or food processor. The paste is usually made from white sesame seeds, but you can also use black ones. Tahini's shelf life when stored in the refrigerator is 1 week. The sauce is ready. Store in the refrigerator and serve with dishes.

Prepare the listed ingredients. The paste is mainly made from white sesame.

Transfer the sesame seeds to a wide pan with sides and place the pan on the stove over medium heat. Do not use high heat, otherwise the seeds will burn quickly!

Toast them for 3-4 minutes, stirring constantly. Roasting will give the sesame seeds a nutty flavor. But watch carefully to prevent burning, otherwise the paste will become bitter! After roasting, transfer the sesame seeds to a plate and let them cool.

Pour the grains into the grinder or blender bowl. Start grinding at high speed.

At first, the sesame will grind unevenly, resulting in coarse crumbs and a slightly oily texture. Then the mixture will begin to thicken and oil will gradually separate. At this point, start adding 1 tablespoon of odorless vegetable oil. Add salt and pour in the lemon juice.

If you want to get a more viscous, liquid paste, you can add 3-5 tablespoons of boiling water and blend everything again. In total, the grinding process takes 15 minutes.
