Chocolate-covered kumquats

Description

Kumquats in chocolate are prepared following the same principle as cherries in chocolate. First, we'll soak the fruit in alcohol and let it infuse (in our case, rum). Then, we'll proceed to coat them in chocolate. To make chocolate-covered kumquats, we'll need dark chocolate, rum (or brandy), and a bit of brown sugar.

    Wash the kumquats thoroughly and prick each one in several places with a toothpick. Prepare a container in which you will marinate the kumquats, and the rum.

    Pour rum over the kumquats and let them steep for at least 24 hours. It's better to let them marinate for a week or two, but not everyone has that kind of patience.

    Then drain the rum from the kumquats, place them on foil, and sprinkle with brown sugar. Refrigerate for 24 hours. This is done so that the chocolate will set more easily on the chilled kumquats later.

    Prepare the chocolate by melting it in a double boiler or microwave. For convenience, I suggest using a cardboard box (I used a cereal box) to insert the chocolate-covered kumquats on toothpicks—this way they will dry faster. Dip the fruits, skewered on toothpicks, into the chocolate, then place them into the box, as shown in the photo.

    Place the kumquats in the refrigerator to fully set. The finished candies are incredibly delicious!
