
Koulouri Greek pastry recipe
Description
The baked goods are quick and easy to make. Koulouri are the Greeks’ favorite bakery item. They are most often served for breakfast—rather like a Greek bagel, coated all over with sesame, with a wonderfully crisp, fragrant crust on top. Koulouri are eaten while still warm, or better straight from the oven. Delicious on their own, they can also be served with any foods. I’m sharing a solid, simple recipe. They go well with tea or coffee.

Prepare all ingredients according to the list.

In a deep bowl, combine 125 ml warm water, 1 tablespoon sugar, and the yeast. Stir and let stand for 15 minutes.

Then add salt and vegetable oil.

Add the flour in portions. You may need a little more flour, but try not to overwork the dough; it should be soft and slightly sticky.

Gather the dough into a ball, brush with vegetable oil, cover, and leave in a warm place for 1.5–2 hours.

Dry-toast the sesame seeds in a skillet until golden, then transfer them to a flat plate.

When the dough has almost doubled in size, it needs to be punched down.

Then divide the dough into 3–4 equal pieces.

Roll each piece of dough into a rope and join the ends to form a bagel.

In a deep bowl, combine 150 ml water and 1 tbsp sugar. Dip each bagel into this water, one at a time.

Then roll in sesame seeds on all sides.

Arrange on a lined baking sheet and bake in the oven at 170 degrees for about 20 minutes.
