Homemade baking for tea. Kefir buns — a simple and proven recipe for those who want to make tasty Easter pastries without extra hassle. Thanks to kefir and yeast, the dough becomes airy and soft, and raisins add a pleasant sweetness. The recipe yields three buns weighing about 350 grams each.     Place all the ingredients on the table. Warm the kefir slightly in a saucepan over low heat. Rinse the raisins in cold water.

    Put the yeast and sugar into a bowl, then pour warm kefir over them.

    Vigorously whisk all the ingredients until the yeast is fully dissolved.

    Sift 100 g of flour into the yeast mixture.

    Mix everything until you obtain a homogeneous mixture — this is the starter. Let the starter rest for 30 minutes in a warm place.

    Sift the flour in batches, mixing it in first with a spoon and then moving on to kneading by hand. Knead by hand for at least 5 minutes.

    In the end, you should get a soft dough that doesn’t stick to your hands. You may need a little more flour, so adjust the exact amount yourself. Shape the dough into a ball in the bowl. Let the dough rise for two hours.

    After the final rise of the dough, add all the raisins to it and fold them into the dough until evenly distributed.

    Then divide the dough into 3 equal parts, shape each into a round and place them in paper molds for baking Easter cakes. Brush the surface of each future cake with a mixture of beaten yolk and 1 tsp of water and let it stand in a warm place for 15–20 minutes.

    Bake the kulichs in a preheated oven at 180 °C for about 35 minutes.

    To make the glaze, place the egg white in a clean, dry bowl and whisk it with a mixer until foamy.
