Easter bread in molds
Description
Delicious baked goods for the whole family. I am a proponent of culinary experiments and love trying new dishes and ingredients, but in my opinion, Easter is not the best time for experimentation. On the contrary, this is the day when the holiday table should be as traditional as possible. I suggest baking a traditional Easter kulich in molds using an old recipe. Our great-grandparents baked kuliches for this holiday exactly this way—let's do the same. Serve cooled or slightly warm.
Instructions

Step 1

Sift half a cup of flour, then add yeast, half a cup of warm milk, and 1 tablespoon of sugar to the bowl with the flour. Mix thoroughly and place in a warm spot. In another bowl, beat the yolk with one-third of the measured sugar, then add orange and lemon zest, softened butter, and vanilla sugar. Mix until smooth.

Step 2

Add the prepared mixture to the sponge, mix well, then pour in the remaining milk and add the salt.
- 3
Step 3

Gradually adding flour, knead the dough until it starts to come away from your hands.
- 4
Step 4

Beat the egg white stiff with the remaining sugar and add it to the dough.
- 5
Step 5

Now, without adding flour, knead the dough, gradually incorporating the raisins.
- 6
Step 6

Leave the dough in a warm place, covered with a towel, for 5-6 hours (sometimes it rises faster).
- 7
Step 7

Let the dough rise several times in volume.
- 8
Step 8

When the dough has risen, fill the molds (halfway).

Step 9

Place in a cold oven, set to 100°C; after 10 minutes, increase the temperature to 150°C; after another 15 minutes, set to 200°C and bake for 15–20 minutes. Check for doneness with a wooden skewer.
