
Kulich in an air Fryer
Description
You can bake a delicious, tender kulich yourself—and even in an air fryer. The loaves come out with a nice, fluffy crumb, fully baked through, and wonderful in flavour. For the filling I used raisins and candied peel, but you can add nuts, any dried fruit, dried cherries, cranberries, and so on. A lovely option for a festive Easter table. The bake is ready. Serve to the table.

Prepare all the ingredients according to the list. Take the butter out in advance and let it sit at room temperature until it softens.

Mix the yeast, warm but not hot milk, 3 tbsp flour from the total amount, and 1 tbsp sugar from the total amount. Stir until smooth, cover with plastic wrap or a towel, and leave in a warm place for 20–30 minutes.

Meanwhile, combine the egg yolks and softened butter.

Add sugar, vanillin, salt, and orange zest.

Beat with either an electric mixer or a hand whisk until light and fluffy, like whipped cream.

After 20 minutes the yeast mixture will look like this: a foam cap has formed and it is just about to settle.

Combine the yeast mixture and the butter–egg mixture. Mix until smooth and homogeneous.

Add the flour. Mix until smooth and uniform.

Cover the bowl with plastic wrap and place it somewhere warm for 1.5–2 hours.

To the risen dough, add washed and dried raisins and candied peel (or candied fruit). You can dredge the raisins in flour beforehand (literally 1 tsp flour is enough).

Stir with a spoon or spatula.

Place the dough into the molds. I use regular medium-sized molds for kulich; I greased them with vegetable oil beforehand. Put the molds with the dough into the air fryer basket, set the temperature to 60 degrees and the time to 25 minutes (let the dough proof).

Then increase the temperature to 150 degrees and set the time to 30 minutes. After the beep, open the oven and check doneness with a wooden skewer. If you need to brown the top more, bake at 180 degrees for another 5–7 minutes.

The kulich in the air fryer are ready. Lay them on their sides and leave to cool, turning them occasionally.

Decorate the cooled kulichi as you like.
