Heavy kulich
Description
Delicious baked treat for the whole family. This simple recipe for "Tyazhely kulich" (dense Easter bread) is convenient because the dough is prepared the night before and baked in the morning. This option is perfect for busy homemakers. 1. First, sift the flour into a deep bowl. 2. Dissolve the yeast in a small amount of warm water with a pinch of sugar. 3. Melt the butter and let it cool slightly. 4. In a separate bowl, beat 2 whole eggs and 1 yolk, adding a pinch of salt. 5. Combine the butter, eggs, remaining water, and sugar with the flour. Knead a smooth, dense dough without lumps. 6. For this kulich recipe, you can use traditional raisins, as well as dried apricots, candied fruits, and nuts. For extra flavor, add vanilla, cardamom, and lemon or orange zest. Mix the dough thoroughly until uniform. 7. Cover the dough with a clean towel and leave it overnight in a warm, dry place. 8. In the morning, knead the dough again, then place it into greased baking molds, filling them about one-third full. 9. Let the dough rise briefly until bubbles appear on the surface. 10. Preheat the oven to 190°C (375°F) and place the molds inside. 11. Depending on the size, the kulich will be ready in 25–40 minutes. Once baked, you can glaze the top with your favorite icing, beaten egg white, or decorate with sprinkles. The inside of the kulich turns out dense yet tender and very tasty. Serve cooled or slightly warm.
