
Citrus Juice Easter Bread

First, let's prepare the starter. Dissolve the yeast in warm milk, add one tablespoon of sugar and two tablespoons of flour. Mix well until no lumps remain, then place in a warm spot.

Grate the orange zest on a fine grater. Then squeeze the juice from the orange. We will need approximately half a cup of juice.

Now beat two eggs and one yolk with sugar. Beat until the mixture turns white and thickens. The remaining egg white will be used for the glaze on the kulich. Store it in the refrigerator.

Using a blender, blend the cottage cheese with butter, a pinch of salt, and vanilla sugar until smooth.

Sift the flour into a bowl, add orange zest and juice, and mix well.

Add the cottage cheese-butter mixture and mix.

Now add the beaten eggs.

And the sponge, which should have already risen. Carefully and thoroughly knead the dough.

Grease the baking pans with vegetable oil. Place the dough into the pans, filling them only halfway. Cover the pans with a towel and set them in a warm place to let the dough rise.

The dough will rise for about an hour. Place the pans with the dough into a preheated oven at 180 degrees and bake for 30 to 50 minutes. Baking time depends on the size of the loaves. Check for doneness with a dry wooden toothpick.

To make the glaze, beat the chilled egg white with powdered sugar until stiff peaks form. Spread the glaze over the kuliches and sprinkle with colored sugar sprinkles.
