
Easter fruitcake with candied fruits
Description
Delicious baked treat for the whole family. This recipe for Easter kulich with candied fruits can be enhanced with a small amount of alcohol—such as cognac, brandy, or liqueur—for added aroma and a pleasant flavor. The baked goods turn out incredibly tender and literally melt in your mouth. As for the topping, you can use anything you like, from simple powdered sugar to elaborate icing and decorative sprinkles.

1. To start kneading the dough, you should, of course, begin with the starter. Warm up some milk, add a couple of tablespoons of sugar and the yeast. Dissolve them completely. Add approximately half of the flour (about 0.5 kg), previously sifted. It's important to make Easter kulich with candied fruits at home only using high-quality flour. Mix everything thoroughly, cover with a clean towel, and let it sit for about 40–50 minutes in a warm place.

2. Combine softened butter with eggs and yolks. Add the remaining sugar, salt, and vanilla. Beat until smooth. Mix with the sponge starter, gradually adding flour. The dough should not be stiff; it should be slightly sticky to the touch. Cover with a towel again and let it rise in a warm place for about 1.5 hours.

3. Toss the candied fruits and raisins, as well as chocolate pieces if using, in a small amount of flour. Gently fold them into the batter and mix. Let it rest for another half hour.

4. After 25-30 minutes, gently knead the dough and let it rise again. Meanwhile, prepare the baking pans and preheat the oven to 170-180 degrees.

5. Carefully distribute the dough into the molds (previously greased with oil) so that it takes up no more than half of the volume. Let the dough sit in the molds for about 20-30 minutes to allow it to rise slightly.

6. Now you can put them in the oven. That's the whole secret of making Easter kulich with candied fruits. Depending on the size of the mold, bake for 30 to 60 minutes. The top should brown evenly, and the dough should be thoroughly baked inside. After that, you can let your imagination run wild and decorate the kuliches as you like.
