
Authentic Kulich

Delicious baked treat for the whole family. This is one of the most classic and popular recipes for authentic Easter kulich. We use candied fruits, almonds, and cognac—the secret to its unique flavor. Many home cooks consider this recipe one of their favorites, even "golden." It's important to use only fresh yeast in this recipe to achieve truly amazing and appetizing results. Serve warm or chilled. Perfect with tea.

First, prepare the starter. To do this, add 100g of flour to boiling milk. Then, in another container, dissolve the yeast in warm milk. Let the mixture sit for ten minutes.

Mix both mixtures and let rise for an hour.

In a bowl, beat the sugar and egg yolks until the mixture turns white in color.

Pour half of the yolk mixture into our starter. Then add 250 g of flour. Knead the dough and let it rise in a warm place for an hour.

Beat the salt together with the egg whites in a deep container until a fluffy white foam forms.

Add the remaining egg yolks to the dough, then incorporate the egg white mixture and gently mix. Then add 500g of flour and knead until you get a thick dough. Melt the butter in a saucepan over low heat. Add it to the dough and let the mixture rise.

While the dough is rising, mix the nuts with candied fruits and raisins in a bowl. Toss them with a small amount of flour.

When the dough has risen, add candied fruits, raisins, and nuts to it. Divide the dough into baking molds. Brush with egg yolk. Place in an oven preheated to 180°C. Bake for 30 to 45 minutes, depending on the weight of the kulich. Decorate the finished kuliches with icing made from whipped egg white and sprinkle with decorations.
