
Easter Bread
Description
The pastry is easy and quick to prepare. Here is the recipe. Serve cooled or slightly warm.

Prepare the necessary ingredients. Be sure to sift the flour.

Dissolve the yeast and 1 tsp of sugar in warm milk, then set aside in a warm place until a foamy layer forms on top. Melt the butter (40 g). Beat the eggs, yolks, sugar, and vanilla sugar until light and fluffy.

Sift the flour into a bowl and make a depression in the center. Pour the yeast mixture with milk and the egg mixture into it, add salt, and mix. Add the melted butter and knead the dough. Initially, it will be sticky—do not add more flour. Knead the dough for at least 10 minutes, until it no longer sticks to your hands.

Grease a bowl with melted butter, place the dough inside, lightly brush the top with butter, cover with plastic wrap, and let it rise in a warm, draft-free place for 1–1.5 hours.

Pour boiling water over the cranberries and let them sit for 15 minutes, then drain through a sieve and dry with a paper towel. Lightly toast the almond flakes in a dry skillet.

The dough doubled in size after 1.5 hours.

Divide the dough into 3 parts, depending on the size of your baking pans. Shape each part into a ball, cover with plastic wrap, and let rest for 10 minutes.

Dust the work surface and the dough with flour. Roll out into a very thin rectangular sheet. The dough should be translucent but not tearing. Brush the sheet with softened butter.

Sprinkle the dough sheet with nutmeg, dried cranberries, and almond flakes.

Roll into a log, cover with plastic wrap, and place in a warm spot. Do the same with the other two pieces of dough.

Cut the roll in half lengthwise with a sharp knife, leaving a couple of centimeters from the beginning.

Spiral one half of the roll toward its starting end.

Roll the second half into a spiral, lifting and placing it on top of the first one.

Carefully place the "Kraffin" kulich into a baking pan, cover with plastic wrap, and let rise in a warm place for 20 minutes.

Preheat the oven to 200°C and bake the buns for 10 minutes. Then reduce the temperature to 180°C. Cover the molds with foil for 10 minutes, then carefully remove the foil and continue baking for another 15 minutes. Let the buns cool completely.
