Instructions
- 1
Step 1

Prepare all the ingredients.
- 2
Step 2

Peel the carrots and cut them into small cubes. Transfer to a saucepan, add a small amount of water (about 75-80 ml), and cook until soft. Then blend the carrots together with the cooking water using a blender until smooth purée forms.
- 3
Step 3

For the sponge, combine the yeast with 50 ml of warm milk. Stir until completely dissolved. Add 1 tsp of sugar and mix again. Cover with a lid and let rise in a warm place for 15 minutes.
- 4
Step 4

The yeast should rise and form a fluffy cap.
- 5
Step 5

Rinse the raisins in warm water, then soak them in orange juice.
- 6
Step 6

Melt the butter until liquid.
- 7
Step 7

Sift 250 grams of wheat flour into a deep bowl. Add a pinch of salt.
- 8
Step 8

Make a depression in the center of the flour. Pour in the melted butter, then add the remaining milk.
- 9
Step 9

Add sugar, vanilla, and carrot puree.
- 10
Step 10

And then add the risen yeast.
- 11
Step 11

Mix everything and add the remaining flour. Knead a smooth, soft, fluffy dough.
- 12
Step 12

Place the dough on a work surface and knead thoroughly. If necessary, add a little more flour during the process. This should take about 5–10 minutes. Shape the dough into a ball, transfer it to a deep bowl greased with vegetable oil. Cover with plastic wrap and let rise in a warm place for 1 hour.
- 13
Step 13

The dough should rise and increase in size several times. Punch down the risen dough.
- 14
Step 14

Roll out the dough into a flat layer, spread the raisins over it. Roll up the dough, then roll it into a ball again.
- 15
Step 15

Divide the dough into portions. I divide it into 2 parts. Knead each one and shape it into a ball. It's best to roll the balls so that the raisins don't stick out on top.
- 16
Step 16

Place the balls into paper molds for Easter bread. I have two molds, each 12 cm in diameter. The dough should fill no more than half of each mold. Cover the molds with plastic wrap and let them rest for 40–60 minutes.
- 17
Step 17

The dough should rise and increase in size several times. Bake the kulich for about 35–40 minutes in a preheated oven at 180 degrees. Check for doneness with a skewer.
- 18
Step 18

Let the finished kulich cool completely at first, then you can remove them from the paper molds.
- 19
Step 19

The cross-section of the kulich looks like this.
- 20
Step 20

Then cover the kulich with icing, add sprinkles. The eggless kulich is ready, enjoy your meal!
