
Gluten-free kulich
Description
Gluten‑free kulich is an adaptation of the traditional cottage‑cheese kulich, but without using eggs, dairy products, or wheat flour. Kumquat can be replaced with raisins or dried apricots, and instead of oat flour you can use rice or millet flour, as they are the most neutral in flavor. If the dough turns out too thick, it is acceptable to add 40–50 ml of plant‑based milk or water.

Prepare all the ingredients.

Soak the kumquat in boiling water for 10 minutes.

Grate the zest, then squeeze 3 tbsp of lemon juice.

Blend all ingredients except kumquat in a blender until smooth. Transfer the mixture to a separate bowl.

Pat dry and finely chop the kumquat. Then add it to the bowl and mix.

Fill the molds for the bags to three‑quarters full.

Bake the kulichs in the oven at 180 degrees for about an hour.

Dilute the glaze with plant milk, spread it on the tops of the cones. Sprinkle chocolate and nuts on top.
