
Kulesh over the campfire
Description
The dish is prepared without unnecessary complications. Kulesh is very simple to make. You can cook it at home, but kulesh cooked over an open fire tastes much better and more aromatic, with a smoky flavor. Plus, it's hard to resist the pleasure of spending time in nature with friends or family. The finished dish can be served at the table.

Place 200 g of cubed lard and smoked bacon into the bottom of the pot. Fry until the fat is rendered and the pieces are browned.

We cut the peeled onion into large pieces and add it to the fat. Cover with a lid and fry until the onion becomes soft.

Then add the carrot grated on a coarse grater, mix and simmer for about a minute.

Rinse the millet well, add it to the pot, and mix thoroughly.

After the millet, add potatoes to the pot, peeled and cut into small pieces. Be sure to stir and simmer for 1 minute.

Now add water and salt. My kulesh will turn out quite thick; if you want it to be more like a soup, add more water. Mix the contents of the pot, cover with a lid.

Cook the kulesh until the potatoes are done, about 15 minutes, stirring occasionally. Prepare the paste: grind the lard, garlic, and salt in a mortar.

Add the stuffing to the kulish. Finely chop some of the herbs and add them to the pot as well. Mix everything well and remove from heat. Cover with a lid and let it steep for 5–10 minutes.

Serve the ready aromatic kulish, sprinkled with chopped herbs.
