
Salmon kuliebyaka
Description
Delicious pastry for the whole family. The salmon kulebyaka turns out divine! It looks wonderful, and is suitable both as a hot or cold dish, and will please everyone. Instead of couscous, you can use rice. The herb-filled crepes can also be left uncooked. Otherwise, it's simple: prepare the filling, buy or make puff pastry, seal the edges of the dough well, and bake in the oven. Serve cooled or slightly warm.

1. I suggest buying ready-made puff pastry. But if you have time, you can prepare it yourself.

2. Put three eggs for the filling to boil. They should be hard-boiled. Then cool them and peel.

3. In a bowl, use a whisk or blender to mix all the ingredients for the pancakes: one raw egg, 1/3 cup milk, 1/3 cup cornstarch, a pinch of salt, and one teaspoon each of chopped parsley and dill. Heat a small frying pan and grease it with oil. Cook the pancakes, using two tablespoons of batter for each. Fry for 30 seconds on one side.

4. Flip the pancake to the other side and cook for a few more seconds. You will get 4-5 pancakes. Place them on a plate.

5. Prepare the couscous. In a high skillet, sauté one diced onion in oil over medium heat until soft. Add minced or pressed garlic and cook for another 30 seconds. Then add the couscous. Cook, stirring, with the onion and garlic for about two minutes.

6. Add a cup of warm broth to the couscous. Bring to a boil.

7. As soon as the couscous with water comes to a boil, remove from heat, cover with a lid, and let it steep for 15 minutes. The couscous will swell.

8. Move on to the caramelized onions. Thinly slice two onions into half-rings. Melt a tablespoon of butter in a frying pan. Add salt and sauté the onions, stirring, until golden brown. This will take 8–10 minutes. If the onions become too dry, add a tablespoon of broth or boiled water to the pan.

9. Remove the onion from the frying pan onto a separate plate.

10. The couscous, crepes, and caramelized onions should be at room temperature when we add them to the kulebyaka. So for now, work on the salmon and eggs. Cut the salmon fillet into small cubes, season with salt and pepper.

11. Chop the hard-boiled eggs.

12. Preheat the oven. Prepare the baking pan for the pie by lining it with parchment paper. My pan measures 46 by 33 cm. Divide the ready-made puff pastry into two parts, one slightly larger than the other. Roll out the larger piece on a floured surface. The size of the pastry sheet should be slightly larger than or equal to the size of the baking pan.

13. Place the dough layer into the pan.

14. Place two pancakes with herbs on the dough in the center of the pan.

15. Place half of the total amount of couscous in a rectangular shape on the crepes.

18. The final layer of filling is finely chopped hard-boiled eggs and minced herbs—dill and parsley.

20. Fold the edges of the dough inward by about 5 cm. Trim off the excess.

21. Roll out the smaller piece of dough and place it on top of the kulebyaka, covering it completely. Trim it into a rectangular shape so that the edges of the top dough layer align with the edges of the bottom layer. Firmly seal the edges with your fingers.

22. Use your fingers to fold down about two centimeters of dough at a time, with each subsequent layer overlapping the previous one.

23. The idea of this fold is to prevent the filling and its juices from leaking out. In principle, you can fold or crimp the dough in whatever way is convenient. The main thing is to seal it tightly.

24. If you have leftover dough, you can cut out a fish or other sea creatures and place them on top. Beat an egg with a spoonful of boiled water and, using a pastry brush, brush the top and sides of the kulebyaka.
