Kulebyaka with cabbage and mushrooms
Description
Perfect with tea and coffee. The listed ingredients make two large kulebyakas. If you don’t have a roller that creates a pattern on the dough, that’s not a problem. Prepare the kulebyaka using the second method. This will not affect the taste. Good luck with your baking. The pastry is ready. Serve it to the table.
Instructions
- 1
Step 1

Take all the ingredients needed to make kulebyaka.
- 2
Step 2

Crumble the yeast into a bowl, pour in the warm milk, add the sugar, and stir.
- 3
Step 3

Melt the butter, let it cool slightly, add it to a bowl, crack in the egg.
- 4
Step 4

Pour in the salt and gradually add the sifted flour.
- 5
Step 5

Knead a fairly stiff, yet elastic and soft dough that does not stick to your hands. Cover the bowl with the dough with plastic wrap or a towel and place it in a warm spot.
- 6
Step 6

In one to one and a half hours, the dough will have increased in volume and will be ready to work with.
- 7
Step 7

Meanwhile, while the dough is rising, prepare the filling for the kulebyaka. Chop the onion and champignon mushrooms arbitrarily and place them in a frying pan.
- 8
Step 8

Slice the cabbage into thin strips and add it to the onions and mushrooms. Pour in sunflower oil and 50–60 ml of water. Add salt and pepper.
- 9
Step 9

Cover the pan with a lid and simmer the cabbage with mushrooms over medium heat until done. Stir occasionally.
- 10
Step 10

Divide the dough into two parts. It makes two large kulebyakas. We prepare the first one. Roll out the dough into a sheet and place half of the filling on it.
- 11
Step 11

Cover the filling with the second half of the dough and seal the edges.
- 12
Step 12

Roll up the dough with the filling, forming a loaf.
- 13
Step 13

Cut off a small piece from the second part of the dough and roll it out. Using a special roller, make slits.
- 14
Step 14

Cover the loaf with the resulting lattice and secure the edges. One kulebyaka is ready.
- 15
Step 15

Roll out the second part of the dough into a sheet in exactly the same way. Spread out the filling and make cuts on the sides, as shown in the photo.
- 16
Step 16

Braid the dough into a plait. The second kulebyaka is also ready.
- 17
Step 17

Place the kulebyaka on a baking sheet, cover it with plastic wrap, and let it rest at room temperature for 30–35 minutes. Then brush it with egg and place it in the oven.
- 18
Step 18

Do the same with the second kulebyaka.
- 19
Step 19

Bake the kulebyaka in an oven preheated to 180 degrees for 35–40 minutes. The baking time depends on your oven.
- 20
Step 20

The second kulebyaka is baked the same way.
- 21
Step 21

Cool the finished kulebyaka, slice it, and serve.
