Kulebyaka with mushrooms and eggs

Description

Homemade pastry for tea. In this recipe the wonderful, tender, rich yeasted dough pairs well with a filling of pancakes, mushrooms, and eggs. The filling turns out juicy and tasty. The shaping method of this kulich (kulebyaka) allows you to cut it into even portion pieces. Honestly, it's hard to tear yourself away from such a pastry. The pastry is ready. Serve at the table.

    For preparing kulebyaka, gather the following ingredients: milk, eggs, yeast, flour, butter and sunflower oil, onion, salt, sugar, mushrooms, dill, pancakes.

    Prepare the dough for kulubiyaki. Pour warm milk into a bowl and add the yeast with sugar. Stir until dissolved.

    Pour a cup of sifted flour into a bowl. Mix well. This will be the sponge.

    Cover the bowl with the pre‑ferment with a towel and place it in a warm spot. After 20–25 minutes it will increase in volume.

    Pour melted butter into the starter. Add one egg, salt.

    Sift another 300–350 g of flour and gradually add it to the starter, kneading a soft, elastic dough.

    Grease the bottom of the bowl with butter and place the dough. Cover with a towel or plastic wrap. Put in a warm place for 50–60 minutes to rise.

    While the dough is rising, prepare the filling for the kulebyaka. Peel the onion, wash it, and finely chop it. Place it in a pan and sauté in sunflower oil until translucent.

    Clean the button mushrooms, finely chop them, and add them to the pan with the onions.

    Fry the mushrooms with the onion until done, 8–10 minutes, stirring.

    Boil the eggs hard, cool them, peel and grate them. Add to the onions and mushrooms.

    Finely chop dill or parsley and add it to the filling.

    Season the filling with salt to taste and mix.

    For this kulebyaka, you will also need thin pancakes. They should be prepared in advance using your favorite recipe.

    Place the filling on each pancake.

    Roll out the dough into a rectangular sheet. Place the filled pancakes on one half. On the other side, make cuts as shown in the photo.

    Roll the dough with the pancakes into an elongated loaf. Place it in a baking pan and let it stand at room temperature for 25–30 minutes.

    Brush with egg and place in the oven preheated to 175‑180 °C. Bake the kulebyaka for 40‑45 minutes until done. Baking time depends on your oven.

    Remove the ready kulobeyka from the mold, let it cool slightly, and place it in a pot with a lid.
