Description

The pastry is easy and quick to prepare. To decorate the center of the kulcha, a special tool called "chekich" is used—a stamp with various patterns. However, you can also create patterns using a fork. In Tajikistan, such flatbreads are traditionally baked in a tandoor oven during big celebrations and weddings. When visiting someone or attending a wedding, it's customary to bring flatbreads and various sweets along with your gift. Kulcha stays soft for a long time because oil is added to the dough—traditionally cottonseed oil, which gives the bread its distinctive aroma and flavor. Have a pleasant time cooking! The pastry is ready. Serve at the table.

    Prepare the necessary ingredients.

    Dissolve yeast, sugar, and 2 tablespoons of flour in warm milk and let sit in a warm place for 15 minutes.

    Sift the flour into a bowl, add the risen yeast, oil, salt, and knead a soft dough that does not stick to your hands. Place the dough in a bowl, cover with a towel, and leave in a warm place to rise for 1.5 hours.

    The dough should double in volume.

    Divide the dough into 6 equal parts. Shape into balls and place under plastic wrap to prevent drying while shaping the kulchis.

    Press each ball from the top with your palm to form a flat patty.

    Make cuts along the edge of the flatbread using a sharp knife or blade. Press down in the center of the flatbread with your fist, then create a pattern using a fork.

    Place the dough pieces on a baking sheet lined with parchment paper. Whisk the yolk with 2 tablespoons of milk and brush the tops of the kulich. Optionally, sprinkle with sesame seeds or cumin. Let rise in a warm place for 30 minutes.

    Preheat the oven to 180 degrees and bake the flatbreads for 25–30 minutes until lightly golden.
